RV Cooking Show - Roasted Pork Arista and a stop in Desert Hot Springs

Hello and Happy New Year RVtravelers!! In this episode of the RV Cooking Show full-time RVer Evanne Schmarder shows you how to make an "occasion" recipe. All the preparation on the tasty roasted pork arista is done the day before - so all you have to do is pop it in the oven and enjoy the special day...and your meal!!



While it's cooking consider taking a soak in the famous mineral waters of Desert Hot Springs. C'mon along and explore the area including a cool flea market, an amazing National Park and more. It's all delicious!!

Vegetarian holiday dish


When you're a vegetarian and the holidays arrive with the usual turkey or ham, what do you have for a main dish? Here is what I created:

1 acorn squash cut in half with seeds removed (roast seeds for snacks later)
1 cup of quinoa
1/2 red onion diced
2 cups of vegetable broth
2 tablespoons of olive oil, preferably Blood Orange Olive Oil from Coeur d'Alene Olive Oil Company
1 cup of your favorite shredded cheese (I used smoked Gouda)

Place the two halves of the acorn squash cut end down in a shallow baking pan with about 1/2" of water and bake at 350 degrees for 30 minutes.

Thoroughly rinse the quinoa to remove the bitter coating, place in a pot with the vegetable broth and cook uncovered, stirring occasionally, until the quinoa is transparent. Cook the diced onion in the olive oil until almost transparent. Stir the onion and quinoa until thoroughly mixed. Slice 1/2" to 3/4" off the top of the squash, remove from the pan and turn over with the open end up. Fill each half with the quinoa mixture and top with shredded cheese.

Place in the oven at 350 degrees until the cheese melts.

Serves two.

*The picture above shows raisins in the mix and no cheese topping. I haven't tried it with raisins but I might next time.
