Everyone Loves Asian Food!
Janet Groene's Won Pot
Cah-Shoo Chee Kong
OK, so it isn’t a real Chinese name but I bet your kids will get a kick out of
saying the same of this dish (One-Pot Cashew Chicken) and they’ll also like its sweet taste.
Broccoli and the vac-packed, cooked chicken bites keep in your cooler for days.
12-ounce bag fresh broccoli florets (keep cool and dry)
12-ounce package bite-size, fully-cooked chicken breast
1 tablespoon cornstarch
3/4 cup orange juice
1/4 cup soy sauce
1/4 cup orange blossom honey
½ cup whole cashews
Pinch ground ginger (optional)
I can or package Chinese noodles
Cook the broccoli just until it’s crisp-tender and drain. Gently mix in the chicken. In a
paper cup, mix the cornstarch and orange juice. Stir into the broccoli with the soy sauce, honey, cashews and ginger. Stir gently over low flame just until the sauce thickens and clears. Serve over hot, cooked rice or crisp Chinese noodles. Serves 4.
