Thanksgiving on the road: No problem!

There's a lot to be thankful for when it comes to enjoying the RV lifestyle. If you'll be RVing over the upcoming holiday, there's no reason to miss out on a traditional Thanksgiving dinner, even in a Class B camper van like mine -- just make a few adjustments.

Many smaller rigs lack a conventional oven but might have a toaster oven instead. That, and a stove top are about the only kitchen appliances you’ll need to cook the whole dinner.

Think small, think sliced
You can get slices of fresh turkey from the deli section of the local grocery store, or you can find sliced frozen turkey breast in the frozen food department. Just pop a few slices into the toaster oven, and your main dish is all but done.

Side Dishes Galore
Next, make the dressing in a crock pot. A prepackaged stuffing mix will do the job, just add water and a little butter. A packet of instant turkey gravy will make enough for one meal. Stir up some instant mashed potatoes if you like. You can cook the yams on the stove top. And, don't forget to open a container of cranberries!

Just Desserts
Here's the best part: you can even bake the pumpkin pie in your toaster oven. Just mix up your favorite pie filling as usual, but don’t make one big pie. Look in the grocery store for individual pie tins with pre-baked crusts. They're intended for making tarts, but there's no rule that says you can't put pumpkin pie filling in them. Bake as directed, and your Thanksgiving Feast is complete.

Pour a glass of wine, sit down at the table, and be thankful for your RV.
